Abstract:

The characteristic model of the dielectric properties of cane sugar solution is proposed. The dielectric properties of cane sugar solution were measured by using a slim-form coaxial probe based on the open-ended coaxial probe technique. The °Brix of cane sugar concentration was measured and analyzed by monitoring the dielectric constant and dielectric loss factor over the frequency range of 0.5–14 GHz at temperatures of 15 °C–55 °C. The Cole–Cole relaxation model was applied to characterize the complex permittivity of the cane sugar solution. This model provided the highest accuracy up to 99.48% and 98.33% for dielectric constant and loss factor, respectively. Hence, this model can be used to describe the complex permittivity of the cane sugar solution with variations in sugar concentrations and temperatures.
