Abstract
End consumers state a rising interest in reliable information about food products. Blockchain technology is considered a beneficial technology to ensure data authenticity and provide traceability and transparency in the food supply chain. In this paper, we, therefore, analyze the integration of end consumers in the blockchain-based system within the food supply chain. As often private permissioned systems are used, we especially focus on this area of technology. To identify the current state of the art and approaches for transparency disclosure for end consumers, we conduct a systematic literature review, following Webster and Watson. We queried well-known databases ACM Digital Library, IEEE Xplore, Web of Science and The DBLP Computer Science Bibliography to obtain our initial set of literature. Based on the set of 111 papers, we performed a two-step process to narrow the set down to 19 relevant papers, from which only seven focused on end consumers. Our findings, based on the analysis of these seven papers, show that the aspect of transparency disclosure for the end consumer in the food supply chain does not go beyond the idea of QR code or tag scanning. Thus, the integration of end consumers into blockchain systems in the food supply chain is largely ignored, and their integration into the system is underrepresented. This raises the question of why end consumers are not considered relevant stakeholders and if private blockchains are suitable when end consumers should access information, opening new discussions around the integration of end consumers.
